Horseradish is a perennial of the cruciferae family which also includes mustard, radish, and wasabi (the Japanese equivalent of horseradish). Allylisothiocyanate or mustard oil, the chief constituent of horseradish is responsible for the pungency of the herb.
The grated root is used in condiments such as seafood sauce, salads, as sauce for roast beef, and in Russian, and Middle Eastern cooking.
