Foeniculum vulgare Mill.
Fennel_the "fish herb"_is the preferred seasoning for fish, but its warm, sweet flavor is also excellent in meatballs, sausages, soups and stews. Try chewing on a seed or two to freshen the breath after meals (a common custom in India). Fennel is a member of the Umbelliferae family which also includes anise, caraway, coriander, and dill among other plants. Although it has a flavor and aroma reminiscent of licorice, they are not related. Fennel is native to the Mediterranean, but it is now cultivated in many temperate climates.
